Healthiest Ever Granola

HELLO SISTERS.

I would like to share the new recipe that I am in love,  great healthy snack to our kids.

I always try to make and create things that all my family can enjoy so I created this granola with so much less sugar and with a light texture so my daughter can enjoy with us. She is 19 months and she really likes to have as a snack, breakfast, ( she thinks is like popcorn 🙂 ) or adds on yogurt, well we have so many possibilities.
She is allergic to coconut and some nuts and seeds so this version does not have coconut, sesame, and nuts but you are free to add and have fun to create your own version.

This is a great breakfast for those who:

– prefer a lighter breakfast in the morning or a great snack I believe you will like this recipe.

– need grab-n-go options for rushed mornings

– serve with plant-based yogurt and fresh fruit – make it look pretty!

¼ honey
Mix well
Add this liquid to the first large bowl and mix to combine.

Directions

Preheat oven to 180C / 350 F.

Let cool and add whatever you want, I added ¼ cup of dried fruits ( I usually mix raisins, cranberries, blueberries and storage in a glass container so I already have my mixed dried fruits ready to go ) mix well and transfer to an airtight container to store. Enjoy with smoothies, yogurts or on its own as a snack.

Optional

You can add chocolate chip, nuts, flakes coconut on the top, is delicious.

Spinach Oatmeal Pancakes

HELLO SISTERS.

Naturally Gluten-Free these healthy spinach pancakes   are made easy in the blender. Full of health oats, protein packed yogurt and vitamin filled spinach with not refine sugar! Great for toddlers & kids these spinach oatmeal pancakes are the perfect fun and flavorful breakfast to get the day started.

Spinach oatmeal pancakes

Yield: approx. 12  pancakes
Prep Time: 5 min
Cooking Time: 10 min
Total Time:  15  min

Recipe

  • 1 1/4 cup oats (old fashion or quick)
  • 2 teaspoons baking powder
  • 1/4 baking soda
  • 1/4 apple cider vinegar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup packed spinach
  • 3/4 cup low-fat plain yogurt
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon honey*
  • 1 tsp vanilla extract

Instructions

  1. Heat griddle (or large skillet) to medium heat about 325-350º F. Lightly grease with oil such as coconut oil or butter.
  2. Add dry ingredients to a blender, oats, baking powder, baking soda, salt, and cinnamon. Blend on high until oats have become fine, almost like a flour. Empty dry ingredients to a large mixing bowl.
  3. Add wet ingredients to a blender, starting with the spinach (blends better if it goes in first), yogurt, milk, egg, honey, apple cider vinegar and vanilla. Blend until spinach is broken down to small flecks and smooth.
  4. Add wet ingredients over the dry ingredients in the mixing bowl and gently mix together.
  5. Working in batches, spoon a scant 1/4 cup batter on to the hot griddle. Cook 4-5 minutes until the edges of the pancakes are visibly cooked but the center is still wet and cooked side is brown.
  6. Flip pancakes and cook another 3-4 minutes until pancakes are browned. Serve pancakes immediately.

Notes

*Do NOT give honey to children under 1 year of age. Alternately I have substituted the honey for a packet of stevia, I just add it to the dry ingredients instead of the wet, and they come out just as delicious!

Enjoy and not forget to give thank to the Lord before eat. 🙏❤️😋

Handmade Vegan Bread

HELLO SISTERS.

I LoVe❤️ Handmade Vegan Bread🍞

Handmade vegan bread

Yield: approx. 1 bread
Prep Time: 1 hour
Cooking Time: 1 hour
Total Time:  2 hours

Recipe

INGREDIENTS

  • 3 cups All Purpose Gluten-Free Flour
  • 3 tablespoons sugar
  • 2 teaspoons instant yeast
  • 1 1/4 teaspoons salt
  • 1 1/4 teaspoons xanthan gum
  • 1 teaspoons apple cider vinegar
  • 1 cup warm milk ( flax milk, almond milk, cashew milk, etc )
  • 1/2 cup warm water ( the last ingredient to mix )
  • 4 tablespoons coconut oil or olive oil

Instructions

Using flax in place of the eggs works well. So in a different bowl use ¼ cup plus 2 tablespoons (1 1/2 ounces) flax meal (the more finely ground the better), blended with ½ cup plus 1 tablespoon water. Let the mixture sit for 10 minutes.

INSTRUCTIONS

  1. Place the flour, sugar, yeast, salt, and xanthan gum in a bowl, or the bowl of your stand mixer. Mix till combined. -Using an electric mixer (hand mixer, or stand), drizzle in the milk, beating all the time; the mixture will be crumbly at first, but once all the milk is added, it’ll come together. -Add the oil, apple cider vinegar and beat until thoroughly blended after mix the flaxseed slowly, beating each in thoroughly before adding the next. -Scrape the bottom and sides of the bowl, add 1/2 cup of warm water then beat at high speed for 3 minutes, to make a very smooth and thick. -Cover the bowl, and let the thick batter rise for 1 hour.
  2. Scrape down the bottom and sides of the bowl, gently deflating the batter in the process.
  3. Grease an 8 1/2″ by 4 1/2″ loaf pan, or a 9″ x 4″ x 4″ pain de mie pan.
  4. Scoop the dough into the pan. Press it level, using a spatula or your wet fingers. -Cover with greased plastic wrap, and set in a warm place to rise until the loaf barely crowns above the rim of the 8 1/2″ x 4 1/2″ pan; or until it comes to within about an inch of the rim of the 9″ pain de mie pan. This should take about 45 to 60 minutes. Towards the end of the rising time, preheat the oven to 350°F.
  5. Bake the bread for 38 to 42 minutes, until golden brown. If you’re using a pain de mie pan, leave the lid on the entire time. Remove the bread from the oven, turn it out of the pan, and cool on a rack.

I Love add Rosemary on the dough and on the top taste great and smell amazing 🤗😋

Enjoy and not forget to give thank to the Lord before eat. 🙏❤️😋

easy hummus

HELLO SISTERS.

I really enjoy hummus, is so healthy and you can add in so many different snack. ❤️

Easy hummus

Yield: approx. 4 portions
Prep Time: 10 minutes
Cooking Time:  25 minutes
Total Time:  35 minutes

Recipe

  • 1 (15-ounce) can chickpeas or 1 1/2 cups (250 grams) cooked chickpeas
  • 1/4 cup (60 ml) fresh lemon juice (1 large lemon)
  • 1/4 cup (60 ml) well-stirred tahini, see our homemade tahini recipe
  • 1 small garlic clove, minced
  • 2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons (30 to 45 ml) water
  • Dash ground paprika or sumac, for serving

INSTRUCTION:

  1. In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
  2. Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes.
  3. Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until you reach the perfect consistency.
  4. Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.

So quick to prepare , easy and amazing. 🤗😋

Enjoy and not forget to give thank to the Lord before eat. 🙏❤️😋

  • 1 tsp dried oregano
